Easy Cucumber Salad

I have been canning pickles and relish quite a bit over the past few weeks.  Needless to say, I think we’ll have plenty to last us all year!   But, I still have more cucumbers.  My family doesn’t care for eating them plain, so I came up with a super easy recipe that we all like using only a few ingredients that we always have on hand.  It is deliciously creamy and will help us (and hopefully you) to use up some of those cucumbers from the garden.  I don’t usually measure out anything… so the proportions below are approximate.  Feel free to experiment according to your taste.  Enjoy!

Easy Cucumber Salad

2 medium cucumbers, sliced

2 T. sour cream

1 T. red wine vinegar

dash of salt and pepper

dash of no-salt seasoning (I get mine from Costco.   It’s so good!)

A little bit of sugar or stevia to taste.

Wash and then slice up your cucumbers.  Set them aside.  Stir everything else together in a medium bowl, add the cucumber slices and mix it up.  Cover and refrigerate for at least an hour to let the flavors mix.
