My new favorite summer salad

This afternoon I made a trip to my favorite grocery store, Trader Joe’s, and they were passing out samples of a watermelon salad. The ingredients looked questionable to me, but I decided to give it a try. And I’m so glad that I did because it has officially become my new favorite salad for this summer. Let’s call it “Watermelon Delight”… and remember that I don’t have exact measurements, so have fun with it!

Ingredients: 1 seedless watermelon, fresh mint, crumbled feta cheese, balsamic vinegar

Directions: Cut rind off of watermelon (perhaps save and use for homemade jelly?) and cut the juicy red fruit into bite size pieces. Put fruit into a large bowl. Chop fresh mint and add to bowl. Add feta cheese and some balsamic vinegar to the bowl and mix it all together. Yum!! I hope you enjoy.
