Anyhow, I decided to share our favorite waffle recipe. And below that is Jonah’s favorite gluten-free waffle recipe!
Whole Wheat Waffles
2 eggs – beat with whisk in a med/large bowl.
Add 2 c. freshly ground wheat berries (white wheat tastes the best), 1 3/4
c. milk OR water, 1/2 c. oil (I use coconut), 1 T. sugar, 4 t. baking
powder. Mix it all together and pour appropriate amount into waffle iron.
You can vary this recipe by adding cinnamon and then serving it with warm
apples or bananas… or add some cocoa for chocolate waffles.
Gluten-free Chocolate Waffles - from Bob’s Red Mill
- 1 cup Bob’s Red Mill Gluten Free All Purpose Baking Flour
- 1/2 cup Flaxseed Meal
- 1/2 cup Brown Rice Flour
- 1 tsp Arrowroot Starch
- 1/2 tsp Baking Soda
- 2 tsp Baking Powder (aluminum free)
- 1/3 cup Cocoa Powder (gluten free)
- 1/3 cup Sugar
- Salt to taste
- 1/3 cup melted Butter or Coconut Oil
- 3 large Eggs
- 1 cup Milk (cow, soy, rice) OR water
Serves 4
� Preheat waffle iron.
� Mix the Gluten Free All Purpose Flour, flaxseed meal, brown rice flour, arrowroot starch, baking soda, baking powder, cocoa powder, sugar and salt together well in a mixing bowl.
� Beat the eggs together in a separate bowl, then add milk and butter (or vegetable oil). Blend wet ingredients into the dry mixture, mix together well. (If it’s too dry you can add a bit more milk.)
� Pour the batter into your pre-heated waffle iron, according to the waffle iron directions.
� Serve with butter and syrup (or honey), or hot fruit, or chocolate and powdered sugar! Depending on how decadent you are feeling! Enjoy!
