I found this recipe on www.recipezaar.com and so made it for dinner tonight using some left-over ham from Easter. It was a huge hit! Plus it was super-easy and so I thought I’d share it with you.
Ingredients
6 eggs
1 cup of milk (I substituted water and it turned out just fine!)
1/2 cup of flour
1/2 teaspoon of salt
1/4 teaspoon of pepper
1 cup of cooked, chopped ham
1 cup of shredded cheddar cheese
Plus some chopped up green onions
Preheat oven to 450 degrees. Beat the eggs and milk in a large bowl until light and fluffy. Add the flour, salt and pepper and continue to beat the mixture until it is well blended. Pour mixture into a well greased or buttered 9×13 pan. (Really grease it well or it will stick!) Bake for 10-15 minutes, until the egg mixture is set. Take it out of the oven and sprinkle the ham, onions and cheese on top. Stick it back into the oven for an additional 5 minutes. Starting at the short side, carefully roll the omelet up inside of the pan. (If you do it too tightly, it willcrack… so aim for a loose roll.) Cut into slices and serve with sour cream. Yummers!
Serve with some fresh bread and a fruit salad – makes a wonderful breakfast for dinner!
