Jonah has been on a gluten-free diet for many months now and I have found several recipes that he enjoys very much. Two are grains and two are main dishes.
GFCF Bread – this is yeast free and I slice it for sandwiches.
2 c. gluten-free flour (I use Bob’s Red Mill)
1 T xanthan gum
1 T baking powder
1 t salt
2 T oil (really yummy with coconut oil)
2 beaten eggs
1 1/3 c. water
1 T honey (or I sometimes use stevia instead)
Preheat oven to 350 degrees. Grease a loaf pan and coat it with a little bit of GF flour. Mix the dry ingredients together in one bowl. Mix the wet ingredients together in another bowl. Combine the wet and dry ingredients together. Pour this mixure into the loaf pan and bake for an hour.
Overnight GFCF Coffee Cake (great for Christmas morning!)
2 c. GF flour
1 t xanthan gum
1 t baking powder
1 t baking soda
1 t cinnamon
1/2 t salt
2 eggs
1 c sugar
1/2 c brown sugar
1 c rice or potato milk
2 t. vinegar
Add the vinegar to the milk substitute and set aside. Mix the dry ingredients together and set aside. Cream the butter and sugars together in a separate bowl. Add the eggs, 1 at a time, while the mixer is still running. Slowly add the dry ingredients. Slowly add the milk mixture. Spoon mixture onto a greased 9×13 pan. Sprinkle the following mixture on top: 1/2 c brown sugar, 1/2 c nuts, 1/2 t cinnamon, 1/4 t nutmeg. Cover and refrigerate for 8 or more hours. Uncover and bake at 350 degrees for 35-40 minutes. Cool for 5 minutes and then drizzle with a glaze mixture of: 1 c. powdered sugar, 3 T rice milk, 1 t vanilla.
Spaghetti Sauce (this recipe comes from my friend Kristin Hagen in Austin who got it from her sister in Ohio) Serve over rice spaghetti noodles with a salad.
2 lbs. browned ground beef/turkey
2 28 oz cans of crushed tomatoes with seasonings
12 oz tomato paste
4 T butter
4 T honey
2 t garlic
2 T basil
Simmer all in a large stockpot for 1-2 hours. Yummy!!
Chiang Mai Curry with Rice -not too spicy Thai dish that the kiddos love.
2 T oil
1 T finely chopped garlic
1 T red curry paste
3/4 lb. browned ground beef
2 c coconut milk
1 3/4 c chicken broth
2 t curry or turmeric
2 T soy sauce (wheat free)
1 t sugar
1 t salt
2 T lime juice
Cooked Rice
1/3 c shallots, chopped
1/3 c green onions, chopped
1/3 c fresh cilantro
Heat the oil over medium-low in a large saucepan. Add the garlic and curry paste. Mash and stir it for about 1 minute. Add the meat and cook 2 minutes, stirring constantly. Add the coconut milk, broth, curry, soy sauce, sugar and salt. Bring to a boil and then simmer for 10 minutes. Stir in the lime juice and serve over the cooked rice. Sprinkle scallions, green onions and cilantro on top.
