And now, here’s the recipe for Apple Slump. If I’m remembering correctly, I got it out of the boy’s home-school curriculum a couple of years ago. It’s super easy and the boys request it quite often for a special breakfast (even though it could easily be a dessert!). I think of it as a coffee cake type of thing. :)

Apple Slump

4-6 tart apples (I’ve also used pears.)

1/4 t. nutmeg

1/2 c. sugar

1/4 t. cinnamon

1/4 t. salt

1.5 c. flour

2 t. baking powder

1/2 t. salt

1/2 c. sugar

1 beaten egg

1/2 c. milk (I’ve just used filtered water before.)

1/2 c. melted butter

Pare, core and slice up the fruit. Preheat the over to 350 degrees. Grease/Spray a 1.5 qt. baking dish. Put the apple inside and cover with the sugar, nutmeg, cinnamon and 1/4 t. salt. Stir to mix it all up well and bake for about 20 minutes.

Meanwhile, sift the rest of the dry ingredients together. Add the wet ingredients and stir gently. Spread this mixture over the top of the apples and bake for an additional 25 minutes.

Enjoy!

On Fridays, we usually go to a home school co-op where the parents teach different classes to all of the kids. Due to the holidays though, there is no more “Friday School” until February… so we are having a fun and laid back day today. We had a late breakfast and added the next Jesse Tree Ornament to our Christmas Tree, and then the boys have been playing a Star Wars board game ever since then. And it’s almost lunchtime! They are having such a fun time, using plenty of imagination and strategy as they play. And I’ve been able to get some work done and even addressed a pile of envelopes for our Christmas cards. After lunch, we’ll do some math and reading, and then I think I’ll just read a bunch of Christmas stories to them.

Scott took this photo of the boys and I yesterday and I thought it was so cute that I posted it as my Facebook profile picture. Then one of my friends commented that it looked as though Jaden was choking the dog. I looked at the picture again and then laughed out loud… for a long time. Then I showed it to Scott who also laughed out loud. I still think it’s a good shot.

We had a good Thanksgiving this year. It was so much more memorable for all of us after studying all about Squanto, Miles Standish, and the Pilgrims in our home school. My parents drove in for part of the day and we enjoyed a great meal together. We are so thankful for family, friends, good health and simple things like a soft bed to sleep on and wood for the fire that heats our home. May you all enjoy this holiday season and may it be filled with sweet memories!

We had a really fun day of school yesterday.

We got through with our math, handwriting and spelling first thing so that we could move on to the “fun stuff”. Yesterday, the “fun stuff” began with couch time (history, english, reading). We’re learning all about George Washington, the Boston Tea Party, and the time when the new colonists first began to call themselves Americans. The kids and I are really enjoying reading about this time in history, looking at our US and World maps as we learn. To go along with this, I am reading a chapter book to them about a little girl who got lost in the woods and is being protected at night by a bear – The Story of Sarah Whitcher. It’s a great book and mentions several of the colonies that we have just studied in our history lessons.

We are also learning about the wise man who built his house upon the rock, from the book of Matthew. So, for our art project, the boys found a smooth, flat rock from the backyard and we wrote JESUS on it. Then we built a little cardboard house to put on top of the rock. The kids decorated the rock with flowers and grass made out of clay.

And then, the kids were in a puzzle mood. Puzzle time commenced! They worked on a puzzle by themselves in the playroom – and it was actually quiet for a while! And later, we did another puzzle at the kitchen table together.
